    3 stars because the food was yummy, despite the generally poor service. When we were seated, they brought out both salsa and beans for dipping our chips. That was really cool since my husband doesn't eat salsa and is usually stuck with just dry chips. It was nice for them to provide an alternate dip. Really great touch! Frankly, we will go back because of that, because of the awesome fish tacos we got, and because of its proximity to other good establishments. But the service was not yummy. Hostess table was a bit snarky. Server was very slow to get us menus, take drink order, receive food, and bring our check. Basically at all stages where the server had to go retrieve something, it seemed like a long time until we saw her again. Nobody was really friendly or chipper. Just some people sorta there... doing a job... no real zeal for it. I like restaurants where the people seem to like people and to like their job, where they're into the experience because hey, I'm paying money to eat out, I expect smiles and an upbeat, fun atmosphere. Those things were missing from our experience here. By the end we were itching to go, even though we were filled to the brim with great food.

    The whole experience was lackluster here. We were in the area for some Castle Rock Outlet shopping and needed some fuel to keep us going. Carlos Miguel's is situated right next to Crave Burger and I'm regretting the decision we made to eat here. The one time I don't use my Yelp App and I end up at a place like this. Place was completely empty and I think it's suffering from an identity crisis. Inside it appears as though they are trying for a version of Mexican fine dining or something. Unfortunately the food quality does not come close to even okay. Price point was high, especially for Mexican. The dishes started at $15 and went up to $28 or so. There was not a separate lunch menu, another miss since I didn't want a platter of anything I just wanted something quick and satisfying. I ordered something with chicken, can't even remember since it tasted like nothing. No spice, no flavor, no hint of heat or herbage or something other than cheese to give the dish flavor. My mom had some sort of stuffed chicken and the chicken appeared to have been prepared in the microwave or re-heated in some way. Crave would have definitely been a better way to go on this afternoon and believe me I will remember this for my next visit to the Outlets. Never again Carlos Miguel's - how disappointing.

    I have been to every continent except one. I have been to 27 countries in 33 days. During said journey's it is probable that I would encounter some bad food. However, NONE, no place in the whole world, have I had food that made me more sick then what these morons serve. I will spare you the specifics, but unless you are looking for a combination of an appendectomy and an enema with rusted fishhooks, ...(and I am honestly being polite here)... And you are foolish enough to eat the food here, God bless you. I cannot with due respect to language and culinary malfeasance give this place a lower recommendation. The fact that they are still in business is a question only the city of Castle Rock can answer. Sickest I have EVER been, and I have eaten food in Central America that dogs wouldn't go near.

    The food is delicious but the service is very very slow. They seem to just hang out and talk with other employees so we probably won't go back which is such a disappointment because the food is very good.

    Wow this place is truly bad. dont waste your time and money. Bad food quality service and drinks. I feel bad talking so poorly about an establishment but i truly havent had such a poor experience in a while. Im not one to write negative reviews either.

    Very impressed. Food was wonderful every time we visited. Service was fantastic, very nice and quick. Came during lunch and barely anyone is here but order the sopa tlalpeno. It is absolutely amazing. Fresh fresh fresh. I know there are negative reviews, but experience it atleast once and try the soup.

    I'm not sure why this place is rated so low. We really enjoy coming here! They have great freshly made guacamole at your table and we like to get the fajitas. They also have a nice patio to sit at when the weather is nice.

    Nice place, staff is friendly, chips and salsa were good but service is super slow. The place wasn't busy, it was during lunch, don't understand why they were soooo slow. Food was overall good to ok.

    One of my favorites that is slipping fast. We frequent this place at least once a month for the last four years. The food is ok (used it be awesome) with solid service that can come with a chip on its shoulder at unexpected times (as a frequent visitor, I really don't need your attitude pal and madam). We find that we just don't go here much anymore. It's sad because we loved it for the first few years we came. Turn this thing around! Go big!

    Nope nope nope. Food: Of the 5 items our table ordered; one was ice cold, one was burnt, and one was plain gross. Not to mention overpriced! Service: Very slow, got our checks wrong, rolled eyes when we asked for anything. Eat elsewhere!

    This place is OK. That's it. One of the MAJOR problems is the HOST STAND. These girls are morons. Everytime I've been there. ..they've sat people who arrived AFTER me BEFORE me. Same size party, no reservation. I'm NOT a stranger to the restaurant business. Food was OK.SERVICE....OK...you get it, right? OK THEN!

    Mediocre...my boyfriend had the Carne asada...they typically ask what kind of beans but they just served them with black beans...only 2 tortillas...and the meat was bland. I asked the bartender to choose my dinner for me because sometimes that's fun. She chose fish tacos. I normally love fish tacos but these were really 'FISHY'... yeah...yeah...they are fish tacos but someone missed the mark on these. I'm not sure we'll be back...actually....pretty sure we wont.

    I am a bit surprised by such a low rating for this restaurant! My girlfriends and I originally wanted to try the burger place next door, but their wait was about 20 minutes. We were pretty hungry after running so we just decided to walk over to Carlos Miguel's. It was on a Saturday, but the restaurant didn't seem too busy. We decided to enjoy the nice weather on the patio. Our server was prompt at taking our drink and food orders and made sure we had chips and salsa each time it was empty. After asking our server what her favorite was, most of ordered her recommendation: shrimp tacos! We were glad we did because it was really good. It came with cilantro rice on the side which needed more seasoning! It was so bland that I wondered if they even put any salt in it. It's unfortunate to see that so many patrons were disappointed by their food and service, but our experience here was pretty nice!

    Simply: They. Just. Don't. Care. Anymore. Seriously, we've been going to Carlos Miguel's for 5 years and the experience has been getting worse for the last year or so. The best part of the dining experience is getting seated. Really. After that, it's a crap shoot if you'll get waited on within 20 minutes. Now, for the food: Eh. Where has the combination of flavors gone? The food used to be so good and now it's basically taste-free. I pray that new construction will bring in a fantastic Mexican restaurant. Adios Carlos...

    Not impressed at all with Carlos Miguel's. I never dined here before tonight, but I had a groupon and decided to give it a try with some family from out of town. The food was pretty bland and left much to be desired. The sides on our plates were cold. The service was bad, and our waiter never really apologized for anything, let alone take anything off the bill. Generally inattentive service throughout the night. Honestly, the only redeeming factor was the half-price house margs (served all night, not just happy hour). Plenty of better, more authentic, and cheaper Mexican food options in the area.

    Every time I've tried this place...disappointment. Mediocre food, abysmal service, and terrible atmosphere. This trip we witnessed the wait staff confronting the hostess on not providing them with enough seated tables. The management was more like an angry overlord glaring down over a fiefdom. Our server did their job but that's it. No smiles from anyone and no sense of caring about our business at all. In making eye contact with the staff and a smile...nothing but dead faces. Either they had a bad Botox session or are going through the motions of a terrible workplace. The food was nearly tasteless, dry and over cooked. Forgettable at best... On our way out... Eye contact with the hostess and not the slightest hint of thanks. Lame...

    We decided to give this place a try being new to the area. We were seated right away, but then sat at our table for 15 minutes waiting to just be greeted. The server never came by and we decided to leave. As we walked out (it was a very slow night so someone should have noticed), nobody even noticed. Needless to say, we will not be returning.

    The service and the food here are HORRIBLE!!! I called to complain to the manager when I got home that night, as we couldn't even find our server after we ordered our food. He was MIA and we couldn't even get a drink refill or silverware!! The manager was rude and unprofessional. The food has no flavor and is extremely overpriced. We won't be back! Please don't waste your time or your money on this place.

    This is probably the worst excuse for a mexican restaurant I have ever witnessed. The only thing that is somewhat acceptable is the table side Guacamole. Everything else tastes terrible. The management is the worst part. Terrible Vibes. Terrible Food. Watered down drinks. Even with Happy Hour prices it is not worth the money. Take my advice and choose somewhere else to eat. This place sucks

    Huge mexican food connoisseurs.... Tried Guadalajara- hated it- Yolanda's- loved it but for a sit down dinner we came here and loved it! Margs are great, chips and beans and salsa were fabulous, we got the pollo sopa and my daughter loved it, chicken tostada- excellent, bean burrito - great and cheese enchilada with tomatillo was delicious. Great service and we found a great restarant here in castle rock

    The bean dip, salsa and chips are a great starter. I really like their beans. The service is good. The servers are nice and always and take good care of you. (Expect for the tall skinny server that acts like an uptight butler) Enchiladas are good and so if the carne asada. That about all I've had. The restaurant is always clean.

    Overall I really like this place. I've never sat in their dining room, and I wouldn't really want to, but the bar area is great! They also have a big patio which is wonderful! Their salsa is good. But I do have to say the margaritas are a little sweet and a little weak, almost made me want to only give it three stars but the food has been great every time. Speaking of which, the fish tacos are great! Also, they have an awesome happy hour- but make sure you sit in the bar cause that's the only place you get it.

    Very disappointed! First the server lied and said they had ran out of limes for our water. Second All the food that came out had zero flavor!!!! The server didn't bring out food for one of our guest. She then proceeded to argue that he didn't order anything!!! The server didn't bring out any drinks for half of our party!!! Terrible, terrible, terrible! !!!

    Hostess was rude, ignored us, had a bigger party 7 of us total. Was finally seated, waitress was so so, several times I had the unfortunate pleasure of her arm pit in my face, no apologies. Margarita lacked any alcohol. Food was so salty even kids refused to eat it. Overall was not happy with service or food.

    The hostess struggled to deal with a 'large' party. (7 people) She was rude with poor people's skill. The couple that came after us received not only their drinks before us but also their food. The margaritas are very weak. The food was extremely salty. I didn't even need the salt on my margarita. When I asked the waitress for her recommendation on which burrito filling to choose she was at a lose, very confused & had to actually look at the menu to give me an answer. Nobody finished their meal due to the over salting. Very disappointed.

    First off terrible service. We should of looked at the reviews before!. Burnt tortillas. I asked for an extra side of sour cream and got charged but never got it REALLY! Idiots when we asked why there was a charge for sour cream when we didnt get it the server just looked dead and confused!!! To say if the place was packed ok we understand but there were alot of empty tables!!.we could never find the server!! Dying of thirst! No refills. we even try to get the host attention but just got ignored like we were inconvenience for him to help us get drinks! Unbelievable U know if this how they treat customers im sure they be out of business soon! We had asked for a manager but never came idiots run this place! do not waste your time for this hole

    This place is just not good. I have honestly never left a Mexican restaurant hungry until today. The food is undersized and over priced. Starting with the seating it took ~ 5 minutes to be seat a family of 5 in a restaurant that had only had 2 tables seated and some folks in the bar area. The gift of chips and salsa with bean dip that you get in most places is Ok at best. The highlight was the salsa, was not bad. The bean dip was Ok, but the appearance is horrible...Add some queso fresco just to make it look more appealing. I had the combo plate tonight with a chilli relleno and chimichanga that lacked in everything except breading...The relleno was heavily breading and the only flavor was the flour. The chimichanga was definitely featuring the tortilla as the meat was almost non-existent. My girlfriend had the beef fajitas and it was just poorly executed. I appreciate not over cooking the veg, but that caused it to be undercooked. In addition, the veg had zero flavor. use some seasoning. The beef would have been better left off of the plate. It also was not seasoned and tough. the beans and rice were uninspiring and also a much smaller portion then I am used to. The waitstaff also unimpressive. Did not seem happy or pleasant, maybe because they work in such a horribly run establishment. in short, fellow yelpers beware for you have been warned!

    Very impressed. Was invited by some of my female co-workers to happy hour here. Enough said about that. Great happy hour. 1/2 price appetizers and $3.75 margs. dont usually drink Margaritas, but when in Carlos you do what Carlos regulars do. Caution on this. They pack a kick. Great staff and new Manager, wait dont guess his name, Jesus was the best. If you know me you wont be affended by what I just texted. Only reason no 5 stars is, use to detest this place. Will try again in a week, maybe we can add the star.

    The food here is great, and it's hard to find good Mexican food in Colorado. The salsa is hands down the best salsa I've had in a long time, it is spicy, tastes of garlic and cilantro, SO flavorful and fresh. They also give you refried beans with the chips and they are almost addicting they are so good; creamy, smokey and just delicious. The chips themselves are good. I've had the beef enchiladas here and they are good but what's really good are the chicken mike enchiladas, great mole. Try their mojitos. I haven't tried their margaritas but I always get either a pineapple, raspberry or mint mojito and they are all very good. Made with fresh mint leaves and not too sweet. Definitely give this place a try you won't regret it! I would give them 5 stars, but the service is pretty horrible at times. And I've had an order made wrong 3 times in a row before.

    Atmosphere and margaritas are good. Food is average, for the price (and I don't mind paying more for an exceptional experience). Service could be better. I never feel a personal connection with the wait staff. I feel there is a bit of arrogance which is a turn off. My advice for management is to improve the menu if you're going to charge more than your competitors. For the money, you're better going to Guadalajara's down the street.

    Second Try - Won't Go Again This was my second time for lunch. The first time it wasn't very good, cool food, but expensive for lunch. This time the food was lukewarm and not real flavorful. Still expensive for lunch. But, the worst thing about the experience was the waiter. He acted insulted to even wait on us. We had to ask for drink refills, had to ask for silverware, and it goes on. The real kicker was that there weren't any customers at 12:30. This should have been a big clue.

    Went here on a Saturday night. Was not really that busy. Chips and salsa were decent and refilled by staff that was not our server. Our server was ok but service overall was very slow. She forgot a few things and drinks were empty nearly the entire night. She didn't know the name of the hot sauce they carry either. I had fish tacos. They were awful. Came with white rice that tasted how I would imagine dog food tastes. The fish was disgusting and unappetizing. It tasted old, freezer burned, and smelled terrible. There was also a hair in it that was definitely not my own. I couldn't finish the meal and the worst part is that I got pretty sick from whatever I ate. I will not be going back.

    Seeing the line for neighboring "Crave" literally out the door on a Tuesday night, I opted to give Carlos Miguel's a go while meeting a friend in Castle Rock for dinner. To be honest? I wish I'd just waited in line at Crave. No bueno. Star 1: How was the service and atmosphere? I will give Carlos Miguel's credit in the atmosphere department. Not only is the establishment absolutely massive, with all different shapes and sizes of seating, but the atmosphere is good and the service really is excellent. Star Granted. Star 2: How were the portions relative to the cost? This is Mexican food people, so you can understand that even after noting that virtually every dish on the menu was $12+, I was expecting some hefty portions. Unfortunately, for $13.95 pre-tax and tip, this was my Pollo Borracho: yelp.com/user_local_phot… What? A small stuffed chicken breast, some rice and beans? No. no no no. No Star Granted. Stars 3 and 4: How was the food? While my Chicken Breast stuffed with Peppers was good and proper spicy, this was something that I likely could have crafted myself without too much of a hassle, and you'd better believe I could do it for far less than $14. Single Star Granted. Star 5: Would you eat here every day if you could? Sorry Carlos Miguel's, but with outstanding Crave Real Burgers next door, and loads of quality Mexican Food in Colorado, I won't be coming back. No Star Granted.

    Ok. I know they have really decent happy hour specials, but I just can't get excited about Carlos Miguel's. It's too loud for me, music-wise. And the food is kinda deep fried bar food. Nice service, but the hubby and I decided not to go back because we just didn't enjoy it.

    5 stars for efficient 'bus-boys/salsa server, 5 stars for GREAT salsa -1 star for strange tasting chips and ZERO star for elderly gentlemen who 'greeted' - ie not even a hello, or good afternoon or happy to see you or thank you for choosing CM! on our very first visit today, 7-20-14. We moved from Corrales NM; we know GOOD delicious Mexican food - the chicken nachos 2 to 3 stars. The restaurant is nice, it appeared clean, great open views, lovely patio - come on CM - get some attitude if you want to succeed! We may return. I hate to give no points to gentlemen, maybe he was not feeling well? had pains or a sad day :(. We will try one more time.

    Great food with amazing flavor.. Come here and eat. BUT..give the food 10 mins to cool down or you'll burn the roof of your mouth...service was soso...slow night and servers got order wrong...I reccommend the chimichanga puerto vallarta...OMG..a shellfish lovers dream of a dish... Nice date night place if you like modern Mexican. Top shelf margarita was perfect..just perfect.

    We've eaten at Carlos Miguel's a couple times. The good news is that it is next door to the movie theatre and it is a convenient. The bad news is that the food is just OK... If your in the mood for great Mexican food don't bother. The margaritas are watered down and the food is pricey for what you get

    If your waiter is Andres...you're probably better off getting up and trying somewhere else. The food is decent and the margaritas average. However, the service is bad enough that I'm surprised they've been here so long. Enjoy your night!

    Ok, so we arrived and there was almost nobody there ... which seemed like a good thing, but now I know WHY it was empty. The place was cold and drafty -- wishing I had worn a jacket in. Next, we get our chips and salsa. The salsa was ok and the bean dip ok ... but the portion of chips ... was less than I would want for one person ... and that little cereal bowl of chips was for a family of four to share ..... oh, and no refills on the tiny chip bowl, nor any service to possibly offer you more. We observed nobody else getting a refill or service either. The menu is pretty extensive and highly overpriced on just about everything. We even had an order of potato skins and while they were fine ... it was the smallest potato skins order I've seen in my life. These were literally 1/2 wide strips each. Wow, they can't use more than 1/2 of a small potato on the entire order I guess. As it turns out, everything we ordered was small and overpriced and only average AT BEST. Nobody found their food tasty. Anyways, service was horrible ... basically non-existent ... super SLOW. Slow to get a box. No drinks refilled or even offered. Slow to get the check. Didn't feel bad leaving a lower than average tip because even that wasn't earned whatsoever. Sorry, but with all the wonderful Mexican places around Castle Rock, this should NOT be a to place to go. Very disappointed and could not get out of there fast enough. AVOID unless you like slow, small and overpriced.

    Eaten here twice. The food is your typical Mexican fare. It's average. However, I was there once for happy hour and had a few margaritas and you know that smell of dirty dish water? Yeah, that's what my massive cup tasted like when I took a sip. It was the same on each cup. Maybe they should switch out the dish water a bit more frequently. If that's dirty, I wonder what else is a little suspect...

    Ready for these guys to pack up and let new ownership take over...time to go. The Meadows deserves better.... If you are from New York or Chicago and have no concept of what good Mexican really is, then you will probably give these guys 4+ stars. However those of us from the south know better.

    Out visiting family from LA and eat at Mexican restaurants quite a bit. After reading the previous reviews I wasn't sure what to expect but the food was fantastic. Only reason I didn't rate 5 stars is cause Ive had some AMAZING Mexican food back home and it's hard to compare. Atmosphere was good and all members with me were very pleased with the dining experience.

    I was in Castlerock visiting a friend & to go watch "Dark Knight Rises" a day after the Theater Shooting. After the movie, it was conviently across the way & decided to go there for a liquid lunch. Margaritas!!!! My friend awears by this place. This was his 2nd time visiting. The first time he went, he created a nice relationship with one of the managers that happened to be there the day i went with him. They have margaritas & they can made into any flavor you want. I got the mango, melon (a little too sweet for my tasting) & the regular margarita on the rocks. It was happy hour and we were going all out. The only food I had here was the chips & salsa that they serve you when you get seated as well as the Chicken Flautas. They were ok. They have a large patio which is a plus but my guy friend is not big on sitting outside in the hotness. If I had the choice I would have been out there absorbing the rays. The time we went around 2pm it was quiet not many people. Once we left out of there around 6pm then the diners who wants dinner we coming thru the door and filling up the patio. Nice place.

    We stopped in at about 430 on a Saturday for an early dinner. We ordered drinks from the menu which stated it was Happy Hour, but didn't get the Happy Hour price because we weren't seated in the Cantina. The whole place was empty and we weren't really given a choice of where to sit so I don't know why it mattered. I got a beef taco which was flavorless and a chile relleno which was below average. My boyfriend got the Puerto Vallerta Chimichanga and liked it. With Crave and Taste of Philly next door, we likely won't be back. The food is over priced and under quality.

    Good food. Been here a couple of times and always enjoy my meal. Hostess can't seat you until the napkins and silverware are on the table. Why does that matter? Because they will call your name then make you stand uncomfortably close to everyone else eating nearby while they finish clearing your table. Happened to us and others after we were seated. Just make sure the table is ready first!

    This is my second favorite Mexican restaurant in this area. I don't know why the negative feedback at all, but I really enjoy the food. We have gone 3 times so far and have been completely satisfied with our orders. My husband enjoys the chips and 3 dips (bean and 2 salsa's) and they just keep bringing him more! Some folks say it is expensive, I find it is appropriate for the food. If you want cheap go to the other places in Castle Rock. There are a few and you get what you pay for - canned refries and taco shells from a box. The servings are not huge, but fill me up. My husbands veggie fijita was excellent - made my mouth water and he had enough to take home. The server even gave him more taco shells to take home with... My poblano chicken enchilada was really good too. I recommend going. Nice atmosphere, good service, good food. Good rating only because I know so many would like a larger serving. We don't drink booze at a restaurant because it is always too expensive no matter where you go. Rather drink my wine or beer at home. So, I can't comment on the price. I say, give it a try.

    I got a note in my mailbox this morning from garret d. that said the following: "you clearly have no idea what your talking about.. they are always slammed on fridays and saturdays.. go and get your pallet checked cause you have no taste buds.. if you dont like it quit going there..there must be something you like to keep goin back" Now, I see that garret has just the one review here on yelp and it's for CM's, so I am not going to tear him completely up but... garret, in the future there's no need to pm a person who gave a different review than you did. Just say it in your own review. And I'd like to introduce you to the Caps key, you'll find it just to the left and right of your pinkies. I decide however that since MY review was written in 2009 I should probably give it an update. The food is STILL only marginal and the service sucks now. Prices are still outrageous too. They wanted to charge me nearly $8 for a beer during HH because I asked for a glass with ice and salt and lime. THAT made it a cocktail? Please. Listen... this is a small town. I frequent CM's because they have outdoor seating in the summer and they are one of 3 restaurants in town who do. I did find a soup there, Tlapeno, which is actually VERY good and only about $4 and that is the only thing I order now. CM's is okay but it's not great. It's barely good. I feel like poor garret should get out more. Since you say you are new to town in your review, let me give you some suggestions for other places to try that you might really enjoy! Give Siena a try, great food, good service, horrible management. Uniscali, best game in town. Great food, wonderful service, amazing management, fun menu. For Mexican food, you'll have to leave The Rock. Head north to County Line and Holly and hit Los Dos Portrillos. THAT is some good Mexican food my friend. Order the Mole. I will continue to go to CM's because it's convenient, has outdoor seating and that soup. That's it. garret, welcome to Colorado my friend. I hope you venture out and find yourself some GOOD food!

    I've eaten at Carlos Miguel's a few more times since posting my last review and had the occasion to eat there just a few days ago with friends. We ordered a plate of Chicken Nachos to share and while they were pretty good, I found it odd that they had raw onions on them. This is the first time that I've ever had nachos with raw onions on top. With the plethora of crappy Mexican restaurants in Castle Rock, there are certainly worse options than Carlos Miguel's.

    Went there once before we were married. Cost about $40 for the two of us. For Mexican? Bleh. Food's good, service was good, nothing really bad about it. I just don't know why it's so expensive compared to every other Mexican food place I've been to. Good location though, very convenient if you're going to see a movie, but you can get the same thing up the street for about half the price.

    I went here for a family dinner on a Monday night. They weren't busy at all (I think we were one of two tables) so we were seated right away. They gave us fresh salsa, bean dip, and homemade chips, all of which were delicious. Both the salsa and bean dip had a really good, unique flavor. You can tell they make it all fresh. I ordered a Strawberry Mojito which was also very tasty. Our waiter was the one downside. He didn't have any personality and seemed less than thrilled to be there. But, our food came out really quick. I had the Tilapia Chapala and it was fantastic. The veggies were steamed just right and were very fresh. I liked that they gave a generous portion of the veggies and they still had a little crunch. The tilapia was cooked well, and the sauce that they marinated the mushrooms in had exceptional flavor. I would have given five stars if it wasn't for our waiter. I will definitely be coming back here for the food, I just hope we get a different server next time!

    We tried Carlos Miguel's for the first time tonight, and we will definitely be back! The menu has tons of choices, far more than most other Mexican restaurants, with a great variety. There's a lot more than just the ordinary everyday fare, and the quality is much better than any of the other Mexican places we've been to. Absolutely the best Mexican in Castle Rock, and among the best in the Denver area. The service was outstanding! Our waiter just kept coming back while we waded through the menu, giving us helpful advice as we went, and then was attentive without being a nuisance the rest of the time. The place is a little noisy, but not overbearingly so. They keep the chips and salsa coming, too. In fact, next time I'm just going to take a little sign that says "No more chips, please!" They just keep bringing more unless you beg them to stop! Not a bad thing, though :-)

    My husband and I dined here for the first time today, it was wonderful! They have a very large deck overlooking the city and the interior of the restaurant is decorated quite nicely. The staff were very welcoming and the food was excellent. Castle Rock can boast of a very fine, upscale Mexican restaurant.

    Horrible food........The food stinks and the price is even worse. The bar and atmosphere are nice, but if you just want a good mexican meal go to Guadalajara. Carlos is convenient to The Meadows for a cocktail, but that's it.

    I have ordered take out from here a couple of times and the service was terrible. I waited at the front for ten minutes without anyone coming to see what I had needed. They just would stare and walk away. I finally had to say excuse me after a long wait and still they ignored me. I left without even getting my food.

    Carlos Miguel's biggest upside is that it's hardly ever busy. The biggest downside - the food's just average. I typically go there for lunch, and while it's a little pricey for the food quality, it's easy, convenient, and predictable.

    Ambiance was nice.. Waiters were nice. The food was not to Carlos maguel standards compares to the Colorado Springs or Denver location. The chili rellano was not fully cooked and sent it back. The chicken enchilada was so so... I was giving it a benefit of the doubt.. Next time I will believe the yelp reviews.

    To begin with I'm not a huge Mexican food fan. Usually the most authentic I go is Taco Bell. Now that I got that out of the way this place was brutal. My wife loves Mexican so we decided to give it a shot. The service was brutal. We waited to be seated and finally ended up just going into the bar because the hostess was busy talking with one of her friends. Our waiter had no personality whatsoever. Took our drink orders and disappeared for 20 minutes. When he finally came back he didn't write what we ordered down and my wife ended up getting something she didn't order. Now on to the worst part of the night, the food. In my wife's words, "Taco Bell has more flavor." It was just bad. I got a steak taco and I'm not sure they even seasoned the meat. She ended up getting a burrito after she ordered a taco thing and she said her's was even worse. After all this we topped it off with the price. It was way to high for the quality and amount that you get! I will never go back. The only thing that looked good was the bar which had a lot of different tequilas and what looked like huge margaritas.

    Even though this restaurant is very close, I won't be going there again. Our service was awful. The waiter didn't get the orders right and didn't seem to care. With the kids plate, his response was oh, they already made it. Really, you can't scrape off marginal beef and put chicken on the plate ( which we asked for in a bowl, by the way)? Add to this the high prices and that happy hour specials are only in the bar and I'm thankful that there are so many other choices in Castle Rock.

    There are far better options in Castle Rock for Mexican food. The service makes you feel like you're intruding in someone's house...then they charge you extra for the intrusion. The prices don't justify the food and service.
